Belgian Waffles

This recipe makes about 9 delicious golden brown 7 inch waffles.

Begin by warming the milk, but be carefull not to let the milk boil. Pour 1/4 cup of the milk into a bowl, add the yeast and allow to dissolve. Let the bowl stand for about 10 minutes. The yeast mixture should become creamy in texture.

Melt the butter in a sauce pan, remove it from the heat and let it cool until its about the same temperature as the remaining milk.

Beat the egg yolks in a large bowl. Add the melted butter and a 1/4 of the warm milk and mix well. Stir in sugar, vanila, salt and the yeast mixture.

Carefully stir in the flour bit by bit alternating with the remaining milk.

In a sepparate bowl, whip the egg whites at high speed until they form white frothy. Fold the mixture gently into the batter, but be carefull not to mix the batter too much.

Cover the bowl with plastic wrap tightly and let the mixture rise in the warm for about an hour.

Bake the waffles on your waffle iron according to the guidlines of the manufacturer. Always remember to preheat your waffle maker ahaid of time.
