Savoury Waffles with Pumpkin and Pancetta

This delicious recipe makes 8 waffles.

Mix together the pumpkin and Pancetta, drizzle with a little olive oil and roast in a medium hot oven for 20 minutes.


To make the waffles, sift the flour, cornmeal and baking powder into a large bowl. Put the egg yolks into another bowl, add the milk, yogurt, Marmite and 2 tablespoons of olive oil and whisk well. Next add the flour mixture and beat well. Put the egg whites into a clean bowl and whisk until you have stiff peaks then using a large metal spoon gently fold the egg whites and chives into the waffle batter.


Depending on the size of your waffle iron spoon about 125ml of the batter into the pre-heated and lightly oiled waffle iron. Cook until crisp – about 4-5 minutes, keep warm and repeat until all the batter is used.


Place a waffle on each plate and using a slotted spoon pile the roasted pumpkin and Pancetta on top drizzled with lashings of maple syrup. Serve immediately.
